Its cow muscle on a bone with fat.

Season and cook it just like any other cut of cow muscle and fat with the bone attached at a similar ratio and it should taste pretty much the same.

Beef shank is a leaner piece of meat. You don't get that thick layer of extra fat that you get in an oxtail. Still good though.
