So I work in a restaurant and I make the menu. They decided they want to open earlier and start selling breakfast. It's kinda of in a country area and I want to sell the usuals like pancakes, grits, waffles ect. but I want a few things that aren't typical dishes in restaurants but not so crazy people will be iffy about ordering it. I have a few ideas and I want to get some opinions on whether or not you would order if you saw it on a menu

1. Fish and savory grits
Fried catfish strips or Blackened Grilled catfish fillets
Savory grits
(Optional) cheddar, American or parmesan cheese

2. French Toast Sandwich
Egg cooked however you want
Bacon or sausage
American, cheddar or swiss cheese
Between two slices of french toast made with Texas toast with warm syrup on the side

3. Egg and Rice
2 or 3 eggs cooked how ever you want
White or brown rice
(Optional) chopped Sausage (breakfast, hot or smoked)
Cheddar, American or white cheddar cheese

I'm just trying to get opinions from people that don't know me before I put it on the menu. Any suggestions are welcome

Edit: the usual crowd is older to middle aged folks in southern louisiana

Fish and grits go hard. I make it every once in a while instead of shrimp and I think I actually like it better. I'm assuming the French toast sandwich is more knife and fork food than actual a handheld sandwich. That sounds like something I would try. In fact I'm gonna make it at home and see how I like it. Those first 2 are both great options to me.

It's handheld. I'm thinking wrap it then cut it in half so it's not as messy

How about a chicken an waffle sandwich
Using the waffles as the bun and fried chicken with a fried eggs in the middle
I thought about that. We do everything to order so it would take too long.

I wouldn't want to do tenders so whole pieces would take like 12-15 minutes to cook. Not trying to get people in and out but I'm trying to keep everything around the same amount of time to make so it goes out together still hot.

You can do the French toast sandwich.
Also you can add the same in a breakfast burrito.
I'd switch out Swiss for pepper jack cheese.

Add should come with a side of hash browns.
