I don't fry often but when I do, Brine-marinate in butter milk and hot sauce - lightly season flour- dredge, dip in buttermilk dredge- fry in safflower oil white meat on the outside, dark meat towards the center. Break down your own chicken for more white meat.

Yes, it takes a while for the pan and the oil to get up to temperature. You don't want to drop food into oil that isn't hot. Get a cooking thermometer to check the oil's temperature.
