Tokyo SOS and Final Wars are worth a look, too.
Start with the original
If you want the more serious ones after that go with Terror of Mechagodzilla, Godzilla 1985, and Godzilla vs Destroyah.
They all have their own charms and some are more comedy than anything (kong, sea monster, revenge). Make sure not to do Final Wars until youve seen a bunch of other ones. Youll appreciate it more if you know all the monsters that show up
Ive loved them since i was a kid so i dont know how someone will react to seeing them now though.

king Kong vs godzilla is the only reason why we have 20 something godzilla movies as it is..

Random bump but I saw Godzilla x Kong NE last weekend; I thought it was super mid but it got me back in a Godzilla mood so here's my take
Disclosure: I havent watched any of the millenium series but Ive seen everything else
- Best is still the original
- Minus One is objectively the next best movie, but for partly nostalgic reasons I have 1984/5/Returns tied with it
The other classics IMO are Kong, MechaGodzilla and Terror of MechaGodzilla, and King Ghidorah
Gigan is a terrible movie on a few levels but IMO still one of the most watchable Showa movies
