Off the top Kingsley and Day-Lewis might get it on raw talent and versatility. Between Don Logan and Daniel Plainview you've cinema's two best headcases of the last decade.
I've only seen O'Toole in
Lawrence of Arabia and
Venus but he was a pro in both
Guiness didn't really wreck it in cinema as much as on the stage so that fukks with his popular legacy, but I do remember an interview w/ Parkinson he gave where he spoke about walking behind random people in the street and trying to mimmick their gait and mannerisms which I thought was dope.
I don't think he's all round GOAT but Paddy Considine probably did my GOAT performance in a British film that I can recall right now
