Hmmm I prefer my sweet plantains savory. I like em with olive oil, garlic and cayenne pepper :wow:. Sometimes chilli powder and lemon juice. I prefer the plantains when they are just turning yellow they fry (or bake) so perfect like that.

they gotta pay the rent, overhead, and make a profit.

i rarely eat out these days unless a real special occasion. i cop spices and check out u tube vids and perfect my own chef quality recipes.

just yesterday a chick on my roster called me up talmbot she's hungry and can she come over.

Im like 90% sure a Jamaican aint make that. NEVER seen rice and peas look that color and the chicken should be darker. Even the cut of the plantains dont look right.

Looks like some soccer mom's intepretation of Jamaican food.

oh knows, just a plantain pic.... there's plenty of pics on the net of Jamaicans cooking plantains. i just chose that one because of the neat presentation and i'm kind of mad at myself for not firing up the grill and throwing on some jerk chicken this weekend.

How crispy are those plantains?

I prefer getting the green ones and smashing them flat and then frying them. Then sprinkle with salt and garlic powder.

Do you think I could do the same with the ripe ones? Like smash them flat and then theyll be crispy or are they gonna stay soft?
